Specialties from Roussillon and Catalonia at the restaurant
The Pyrénées-Orientales region has a rich gastronomic heritage. The cuisine of this part of Occitanie uses both seafood and mountain produce. It has been influenced by many cultures, particularly nearby Spain. There are as many fish-based dishes (cod, sea bream, sardines, Collioure anchovies, langoustines, prawns, clams, mussels, etc.) as there are charcuterie and meat dishes (lamb, snails, pork, etc.).
Roussillon cuisine
Roussillon cuisine gives pride of place to fresh fruit and vegetables (purple artichokes from Roussillon, apricots, tomatoes, asparagus, etc.) as well as pulses such as chickpeas, broad beans and lentils. In terms of grains, there are many specialties based on rice or pasta and sometimes potatoes. For example, there is a version of paella where rice is replaced by pasta; this dish is called fideuà.
Among the most popular specialties
- Serrano ham and Pan Tomate
- Escalibada (assorted grilled peppers, eggplants, onions, and salt)
- Anchovies from Collioure
- Boles de picolat (meatballs in a sauce with porcini mushrooms and olives)
- Chicken with prawns
Desserts from Roussillon and the Catalan coast
When it comes to sweet treats, Catalans are not to be outdone. Among the best-known and most popular traditional desserts are:
- Crema catalana, a kind of crème brûlée flavored with anise and lemon.
- Bunyetes, thin doughnut-like cakes eaten at Easter
- Rousquilles
- Almond croquants
There are many other Catalan specialties to mention, as the region is so rich in flavors, but the easiest thing to do is to come and taste them for yourself at Restaurant Ma Prairie!
