Specialities from Roussillon and the Catalan country in the restaurant 

The Pyrénées-Orientales has a rich gastronomic heritage. Indeed, the cuisine of this Occitan region uses both sea and mountain produce. It has been influenced by many cultures, not least nearby Spain. There are as many fish dishes (cod, sea bream, sardines, Collioure anchovies , langoustines, gambas, clams, mussels, etc.) as charcuterie and meat dishes (lamb, snails, pork, etc.).

Roussillon cuisine

Roussillon's cuisine is based on fresh fruit and vegetables (artichokes, apricots, tomatoes, asparagus, etc.), as well as pulses such as chickpeas, beans and lentils. As for cereals, there are many specialties based on rice or pasta, and sometimes potatoes. Paella, for example, has a version in which the rice is replaced by pasta; this dish is called fideuà.
